What is a bellini?
A traditional bellini is started with a fruit puree or syrup. Usually, bellinis are made with peaches. Then, it’s topped with Prosecco or some type of champagne. These ingredients are not Keto-friendly, so you’ll be making your own natural peach puree and using sparkling water instead of champagne.
Are peaches Keto?
Typically, you would not see peaches on the Keto diet. The most Keto-friendly fruits are berries, like raspberries and strawberries. A small peach will usually have about 12 grams of carbs. If used sparingly and thoughtfully, you can enjoy this recipe on occasion without taking your body out of ketosis.

Step 1
Add frozen peaches, lemon juice, water, and liquid stevia to a pot on the stove. Simmer the ingredients with a lid on the pot until the peaches are soft enough to mash with a fork. Depending on how large your pieces of frozen peaches are, the cooking time may vary.Step 2
Once the peaches are soft, pour all the ingredients into a blender or bullet blender. Blend the peaches and liquid until they’re pulverized into a puree. Allow the puree to cool entirely in your refrigerator before adding it to the bottom of champagne glasses - about 30 minutes.Step 3
After adding the peach puree to champagne glasses, fill each glass with approximately 6 ounces of sparkling water. Plain sparkling water is perfectly fine for this recipe to let the natural peach flavor stand out. Otherwise, you may use peach-flavored sparkling water to enhance the flavor.
