Personal pizzas are always a fun way to enjoy a snack or lunch! These mini pepperoni pizzas are baked with a Cheese Crisp Crust, so they’re entirely ketogenic! You can add additional toppings at your discretion, such as bacon, spinach or arugula, fresh oregano, or other cheeses! Always keep an eye on your cheese crisps as they bake in the oven to avoid burning.

Ingredients

  • Mozzarella Cheese

    Mozzarella Cheese

    2 cup, shredded

  • Italian Seasoning

    Italian Seasoning

    3 teaspoon

  • Pepperoni

    Pepperoni

    4 slice - each 0.1 ounce

  • Basil

    Basil

    4 leaf

  • Parmesan Cheese

    Parmesan Cheese

    2 teaspoon, grated

  • Step 1

    Preheat an oven to 350 degrees. Line a sheet tray with parchment paper as well. Combine the mozzarella cheese and Italian seasoning in a bowl. Then, create 4 pizzas that have a ½-cup of the cheese mixture each on the parchment paper.

    Cut the pepperoni into small pieces, and distribute them over the circles of cheese. Bake the pizzas for 4-5 minutes each, or until the cheese has melted to form single discs. When they’re done baking, use a spatula to gently form a circular shape and enforce the edges.

    Allow the pizzas to cool for 5 minutes before transferring to a serving dish. This way, the cheese can solidify. For serving, top each pizza off with chopped basil and grated parmesan cheese.

        It is better if you mix sliced courgette with the cheese in the base.

          I make this in a non-stick skillet.. Fry the cheese to a golden brown on one side. No additional oil is needed. Carefully turn it over and add 1 tablespoon of sugar free pizza sauce, basil and Parmesan . When the next side is browned they in the pepperoni and fold it over. Let it cool on your plate for a minute or two. Absolutely delicious. No sacrifice here

            I should have left it in the oven longer. But other than that. Its delicious. I love spice so I added Cayenne pepper in it.

                  Fresh mozzarella works great. Once the cheese circles have cooled a bit, I roll them up for pizza roll ups. They keep nicely this way for left overs.

                    I make these and drizzle a little sugar free low carb spaghetti sauce over the top. They absolutely satisfy pizza craving and I don’t miss the crust at all.

                                  Is this something that could be made in advance and warmed up when it’s snack time?

                                    Hi there! Great question! This is definitely a recipe you could make in advance and warm up later. If you heat it up too much, and the cheese starts to get a little melty, let it cool on your plate for a minute or two so it can solidify again before eating. Hope this helps!
