Keto Tahini Mushrooms

These quick and easy Keto mushrooms make a delicious low carb side option. Our simple Keto mushroom recipe is prepared with sliced cremini mushrooms, olive oil, earthy tahini, lemon juice and aromatic garlic. The mushrooms are simply pan-fried on the stove until tender, then tossed in a tahini sauce, rich with Keto-friendly fats.

What is Tahini?

Tahini is a thick paste made from blended sesame seeds. Popular in Middle Eastern cuisine, tahini has a variety of uses and can be added to both sweet and savory dishes. It is also a great low carb alternative to nut butter and can be used to add extra healthy fats to dressings and sauces.

Serving Suggestions

These tender Keto mushrooms make a delicious low carb side, best served warm. The mushrooms would make a great accompaniment to a Middle Eastern inspired Keto main and can be enjoyed with meat or plant-based proteins. They can also be added to some low carb leaves, such as arugula, to create a warm Keto salad.   • Step 1

    Wipe clean the mushrooms and thickly slice. Thinly slice the garlic. Heat 2 tablespoons of olive oil in a skillet over a medium heat. Add the mushrooms and garlic and pan fry for 6-7 minutes until the garlic is tender and the mushrooms are golden. If there is a lot of liquid in your pan, drain it off once the mushrooms are cooked through.

    While the mushrooms are cooking you can prepare the dressing. Add the remaining olive oil to a small bowl along with the tahini and lemon juice. Season with salt and pepper and whisk to combine until smooth. You may adjust seasonings and add more or less lemon and tahini as preferred.

    Remove the mushrooms from the heat and drizzle over the tahini dressing. Toss to combine. Scatter with chopped fresh parsley to serve.
