Tomato Raw (includes Cherry, Grape, Roma)
3 cherry
Sour Cream
2 tablespoon
Unsalted Butter
1 tablespoon
Garlic
1 clove
Hot Chili Peppers, Red, Raw
1 each - approx 4" - 6" long
Scallions
1 large
Cilantro
1 teaspoon, chopped
Cheddar Cheese
½ cup, grated
Mozzarella Cheese
½ cup, grated
Gouda Cheese
½ cup, grated
White Onion
¼ medium - 2 1/2" diameter
Black Pepper, Ground
⅛ teaspoon

Step 1
Finely chop the onion, tomatoes and chili and crush the garlic. Melt the butter in a small pan over a low/medium heat. Add the vegetables and sweat gently for 2-3 minutes until tender and the tomatoes have softened.Step 2
Increase the heat to medium, add the sour cream and stir through the vegetables until hot through and simmering.Step 3
Add the cheddar and stir until melted, taking care to not burn the cheese.Step 4
Add the mozzarella and stir until melted and combined with the cheddar.Step 5
Add the Gouda, season with black pepper and stir until melted and all three cheeses are smooth and well combined.Step 6
Transfer the dip to a serving bowl and garnish with sliced scallions and a sprinkling of fresh cilantro to serve.
