Step 1
Preheat your oven to 380 F/190C. Lightly grease 3 ramekins, sprinkle the insides with 1 tbsp of almond flour, and set them aside. Crack the eggs and separate the whites from the yolks.Step 2
Add the butter to a small saucepan and place it over medium-low heat. Add 1 tbsp of almond flour and whisk for 2 minutes. Add the heavy cream and a pinch of salt.Step 3
Whisk until the heavy cream reaches a simmer. Reduce the heat to low and let the mixture thicken for 3-4 minutes. Take the saucepan off the heat and whisk in the cheese and egg yolks. Set the saucepan aside.Step 4
Add the egg whites to the bowl of your stand mixer. Beat on high until the egg whites are light, fluffy, and soft peaks have formed. Add 1/3 of the egg white mixture to the saucepan with the cream mixture.Step 5
Fold to lighten up the mixture. Add the remaining whipped egg whites and carefully fold using a spatula. Divide the mixture into the prepared ramekins.Step 6
Transfer to the oven and bake for 20 minutes. They should have puffed up and risen. Serve immediately before they deflate.

We u6oz ramekins, but 8oz would work as well.

sub out the Gruyere cheese for a different type of cheese, and this is fine! Gruyere cheese smells like FEET!
