Keto Easy Italian Ice

Nothing beats Summer or hot weather like a cold, icy, and lightly sweet treat. You cannot miss this easy Keto Italian ice recipe. It’s made with all-natural ingredients, including fresh strawberries, honey, lemon, and a hint of liquid stevia. All you need is lots of ice on hand to turn those ingredients into the perfect hot-weather dessert. If it’s not summertime, you can try making the recipe with frozen strawberries instead of fresh ones, but you won’t need as much ice. However, it’s best to make the recipe with fresh, in-season strawberries for a naturally sweet treat.

What is Italian ice?

Italian ice sometimes gets related to in the same categories as ice cream and sorbet, but that’s just because it’s a sweet treat. The truth is, Italian ice is way healthier than American-style cold desserts because it doesn’t use any dairy or eggs. It really is just made with ice and fruit, plus some healthy sweeteners. Simply blend your fruit of choice with lots of ice, freeze it, then chip away to make the shaved ice look.

Are strawberries Keto?

Strawberries are one of the healthiest fruits you can eat on the Keto diet because they are low in carbs. Other berries that are Keto-friendly include blueberries, raspberries, and blackberries. Aside from strawberry flavor, you could make blueberry or mixed-berry Italian ice!

Recipe Steps

1 h 40 min

  • Step 1

Start by removing the tops from the strawberries before you measure them and add them to a blender to get the most strawberries you can. Add honey, lemon juice, liquid stevia, and about just 1 cup of ice to the blender. Blend the ingredients until you have a really icy mixture, then add the remaining ice. Blend again until you have a smooth but really thick mixture.
    Step 1
  • Step 2

Pour the mixture into a glass baking dish. Spread it out into a large dish to help it freeze quickly. Place the dish in your freezer for 30 minutes. After that time, take the dish out, and use a fork to scrape the strawberry ice into a slushy mixture.
    Step 2
  • Step 3

Spread the slush out in the dish again and return it to your freezer. Freeze the strawberry ice for at least 1 more hour or until the center is firm. Before serving, you’ll use a fork again to scrape the ice into what will look like Italian ice. Scoop the strawberry Italian ice into cups for serving by the ounce.

There is a sugar free honey available by Honeytree. Tasted just like real honey.

I used coffee syrup (vanilla); 4pumps or 2 Tbl instead of honey and stevia. Very yummy!

There is a whole story about artificial sweeteners raising glycemic levels and, even if there is a marginal quantity of honey, it has GI of 58! (Sugar is 60). So I would love to have an explanation because visibly I’m missing something. Thanks

You should be counting net carbs; only count sugar and not sugar alcohols or fiber.

2 tsp in this whole recipe is barely anything, but I do understand where you're coming from.
