Ingredients
Raw Egg
6 medium
Bacon
3 slice - 6" long
Baby Spinach
1-½ cup
Blue Cheese
1 tablespoon
Butter
1 tablespoon
Olive Oil
½ tablespoon
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Heat the olive oil in a skillet over a medium heat. Roughly dice the bacon and add to the skillet cooking through until crisp and golden.Step 2
As the bacon is just cooked, add the spinach to the skillet and stir until just wilted. Remove from the heat.Step 3
Add the eggs to a mixing bowl with the salt and pepper. Beat well to combine.Step 4
Melt the butter in the same skillet used to cook the bacon over a medium/high heat. Add the beaten egg and leave to settle and start cooking. Once the egg begins to set around the edges, use a spatula to bring the edges inwards allowing any uncooked egg to seep underneath.Step 5
Once the omelette is cooked through, remove from the heat and layer one side with the bacon and spinach and crumble over the blue cheese.Step 6
Fold the empty side over the filling, folding the omelette in half to serve.

Very easy to make. I used pre-cooked bacon and frozen spinach because my fresh spinach went bad. It turned out not to matter. I also used 4, not 6 eggs for 2 people and added some American cheese to the top. This changed the macros, but I still think it was Keto-licious.

I used to make this omelet with feta cheese. Blue cheese is just not my thing... hope this helps for other bo blue cheese eaters 😉
