Picture this: you and your friends are hanging out late at night, munching on a platter of french fries loaded with steak slices, caramelized onions, and sunny-side-up eggs. Nope, this isn’t a dream, and yes, these loaded fries are Keto-friendly. What we just described is chorrillana, which is a traditional Chilean dish.
Chorrillana has many versions where other ingredients like chorizo, cheese, or sauces are added. In this recipe, we are recreating the simple version of this dish, but Keto style. We guarantee you, this is one of the best Chilean Keto recipes that you will try.
How to make Keto french fries?
While you can make fries using low-carb vegetables, we don’t think it is fair for this indulgent meal. We are making crispy “ french fries” from scratch using only three ingredients. First, we prepare the dough by mixing almond flour, xanthan gum, and water. Then we roll it out, slice it into “fries,” and bake until golden and crispy. These Keto fries are easy to make and are good enough to be eaten alone with a sprinkle of salt.
What steak cut should you use for this Keto chorrillana?
You can use your favorite steak cut, but it is usually prepared with a New York strip or filet mignon. However, it is essential to marinate it in tamari, Worcestershire sauce, vinegar, and garlic overnight to develop a beautiful flavor.
Is this recipe gluten-free?
Fortunately, it is! The fries contain no wheat or gluten, and the marinade uses tamari instead of soy sauce. This dish is also dairy-free and high in protein.
Can you adapt this low-carb dish to a vegetarian diet?
While this isn’t traditional, we don’t see why you can’t create a vegetarian version of chorrillana. Mushrooms would be an excellent substitute for the steak. Slice chestnut or portabello mushrooms, and marinate them for a couple of hours. Strain the mushroom, then pan fry them on high heat until golden. Serve the rest of the dish as is.

Step 1
Add the tamari, Worcestershire sauce, vinegar, powdered sweetener, salt, and pepper to a bowl. Mince the garlic and add it to the bowl. Whisk the marinade, add the steak, coat well, wrap the bowl, and place it in the fridge to marinate overnight.Step 2
Preheat your oven to 400 Fahrenheit, and line a baking sheet with parchment paper. To prepare the dough for the Keto fries, mix the almond flour and xanthan gum in a bowl. Pour the hot water slowly using one hand while whisking with the other until the dough comes together. Set the bowl aside for 15 minutes.Step 3
Place the dough between two pieces of oiled parchment paper. Roll it out until ¼ inch thick. Slice it into thin “fries”.Step 4
Transfer the sliced dough pieces to a lined baking sheet. Brush both sides generously with oil. Bake for 10-12 minutes until golden brown.Step 5
Take the steak bowl out of the fridge. Add 1 tbsp of oil to a heavy skillet over high heat. Cook the steak slices for 2-4 minutes per side, depending on the thickness. Transfer the steak to a plate to rest.Step 6
Add the butter to a non-stick pan over medium heat. Thinly slice the onions and sauté them for 2-3 minutes until golden brown. Season with salt and pepper and set aside.Step 7
Add a tbsp of oil to a non-stick pan over medium heat. Crack the eggs straight in the pan, fry until the whites are cooked, but the yolks are still runny.Step 8
To assemble, place the fries on a platter. Thinly slice the steak and distribute it over the fries. Top with the sauteed onions and fried eggs. Season with salt and freshly cracked pepper and serve immediately.
