Ingredients

  • Baby Spinach

  • Bacon

    Bacon

    3 slice - 6" long

  • Egg Whole

  • Mushrooms

    Mushrooms

    1 cup, sliced

  • Blue Cheese

    Blue Cheese

    ½ cup, crumbled

  • Salt

  • Step 1

    Preheat the oven to 400 degrees Fahrenheit.
  • Step 2

    Heat 2 tablespoons of olive oil in a frying pan over a medium heat. Add the chopped mushrooms and fry gently until tender – about 3-4 minutes.

    Add the spinach to the pan with the mushrooms and season generously with salt and pepper. Cook until the leaves are just wilted. Remove from the pan with a slotted spoon, leaving any oil behind, and set aside.

    Roughly dice the bacon and add to the pan, cooking through until browned all over.

    Return the mushrooms and spinach to the pan with the bacon and stir well to combine. Remove the pan from the heat and add the blue cheese, mix well.

    Divide the cooked mixture evenly between two ramekins creating a small well in each center.

    Crack an egg into each well then transfer to the oven to bake for 10-12 minutes or until the egg is cooked through to your preference.

      Just made this!!! It was delicious. I substituted blue cheese for feta as my husband request. I will try it with cheddar next an add more spinach.

          Very savory with the bleu cheese. You could make this with various veggies. So tasty! Took about 15 min for the egg to actually be cooked. Will definitely save this one. Love the single portions.
