Keto Chocolate Almond Brownies
With a cakey exterior and a perfectly moist and fudgey center, these low carb chocolate brownies are the ultimate treat.
Delicious once cooled, these brownies can also be served warm with a dollop of double cream or a scoop of your favorite keto ice cream.

Dark Chocolate by Green And Black's

Butter
3 ounce
Egg
2 medium
Finely Ground Almond Meal Flour by Bob's Red Mill
2 ounce
Unsweetened Cocoa Powder by Ghirardelli
1 ounce
Almond Butter
1 ounce
Xylitol Sweetener
1 cup

Step 1
Preheat the oven to 350 degrees Fahrenheit, and line an 8x8 inch brownie tin with baking paper.Step 2
Break the chocolate into a bowl with the butter and almond butter. Microwave to melt, or create a double boiler on the cooker, by resting the bowl just above a pan of boiling water (do not sit the bowl directly in the water). Stir the melted ingredients together until smooth and set to one side to cool completely.Step 3
Add the almond flour to a bowl with the cocoa powder and mix to combine. Set to one side.Step 4
Add the eggs to a large mixing bowl with the xylitol and whisk vigorously for 4-5 minutes until smooth and frothy.Step 5
Once the chocolate mixture is completely cool, pour slowly into the foamy eggs and fold in gently until the egg mixture is completely combined. This process needs to be slow to ensure the eggs do not lose their fluffiness.Step 6
Slowly tip the cocoa and almond mixture into the bowl and again, fold through gently, until you have a smooth, fudgy batter.Step 7
Pour the mixture into the lined brownie tray and bake for 30 minutes or until a skewer comes out clean and the brownie is just cooked in the center.Step 8
Allow the brownie to cool completely in the tray before slicing into 16 squares. The brownie should be fudgey and moist in the center.

1st, 5g total carbs for 1 serving is great for a brownie - however i find it very difficult to have meat and veg 2x/day with a brownie 1x/day and stay under 20g total carbs. 2nd, based on my cupboard, i made a couple ingredient substitutions. as a 1:1 for the green and black’s i used lily’s 55% dark chocolate chips that are already sweetened with stevia. and i used lakanto powdered monk fruit/erythriol as a 1:1 for the xylitol. with this combination the end result is sweeter than my preference. finally, if i make these again, i’ll cut the added sweetener at least in 1/2, maybe more. however, since they don’t fit into my meal plans well, i probably won’t be making them again.

I find a lot of the recipes don’t fit my carb macros! Tough to stay at 20 or below 😩. Veggies should come first as carb count. No room for more than that!

10g of carbs in a single 1/16 square doesn't seem to be very "keto" to me. Seems to be more appropriately characterized as gluten free, perhaps.

Hello - thank you for your message. 1 serving is 2 brownie squares, so there are 8 servings from the total batch - 2 squares per serving. The total net carbs for 2 squares is 7g, so 3.5g for one square! I hope this helps!
