Low Carb Green Fat Head Pizza

This pizza is completely Keto and vegetarian! There is still plenty of protein to enjoy from the spinach. There’s also a peppery flavor from fresh arugula and an herb-y hit from some fresh basil as well. Top it all off with gooey mozzarella cheese and olive oil, and you have yourself one mean, green Keto pizza!

  • Spinach

  • Step 1

    Preheat and oven to 350 degrees. Prepare a sheet tray with wax paper and pan spray. Place the fat head dough on the tray, and use a second piece of wax paper to flatten the dough to a ¼-inch thickness.

    Roughly chop the spinach, arugula, and basil, and arrange these on the pizza dough. Leave about an inch of space around the edge so a crust forms during baking. Chop and arrange the mozzarella cheese on top.

    Set the pizza in a freezer for 20 minutes. Then, drizzle the olive oil over the pizza before baking. Make sure most of the olive oil coats the greens, so they don’t burn during baking.

    Bake the pizza for about 20 minutes or until the dough is cooked through and has a golden brown crust. Cool the pizza slightly before slicing and eating!

    Look at the photos— there is NO WAY that is 35g of cheese on top of those greens. Is the recipe wrong or the photos?

      This looks delicious, but I have to point out that spinach is a terrible protein source. 1 cup (fresh) contains only about 1 gram of protein, and there is no possible way you could put enough on a pizza to make even a dent in a day's macros. The cheese on top & in the dough will far outweigh the tiny bit in the spinach. However, that being said, I still plan to try this (although I may try feta on top, or goat cheese. Thanks for the inspiration!
