What Can I Use Instead of Salmon?
We have used smoked salmon in our Christmas Keto recipe to add a touch of luxury to this special breakfast. If you would like an alternative, you could stir through some cooked diced pancetta or some flaked smoked mackerel. Step 1
Crack the eggs into a mixing bowl. Finely chop the chives and add to the bowl along with a pinch of salt and pepper, the lemon juice and zest. Beat well to combine.Step 2
Melt the butter in a skillet over a medium heat. Add the beaten egg mixture. Let the egg settle for a moment and start cooking, then scramble with a wooden spoon. Cook through to your preference. Remove the skillet from the heat.Step 3
Roughly chop the smoked salmon. Add the salmon to the skillet and stir through the cooked eggs. Mix well to ensure the salmon is distributed evenly throughout.Step 4
Slice the avocado in half. Remove the stone from the center. Divide the smoked salmon and scrambled egg mixture evenly between the two avocado halves, filling the centers and covering the tops of the avocados. Serve immediately.

This dish is delicious. Only change I will make is to eliminate the added salt. The smoked salmon is salty enough for my taste.
