Dice the cucumber, thinly slice the onion and roughly chop the parsley. Add to a mixing bowl. Roughly tear in the anchovy fillets and add the capers and lemon zest. Toss to combine.Step 2
Season the salad with black pepper and drizzle over the lemon juice and olive oil. Stir well to combine.
