  • Step 1

    Preheat an oven to 375 degrees, and prepare an 9x13 baking dish with pan spray. Unwrap and lay down your boneless, skinless chicken thighs on a clean surface. Pound them flat with a meat tenderizer so they are all an even thickness.

    Chop and arrange the cauliflower in the bottom of the baking dish. Don’t leave any space open. Dice and arrange small pats of butter evenly over the cauliflower, as pictured.

    Lay the chicken thighs down over the cauliflower, also making sure to leave no gaps in between the ingredients. Sprinkle the salt, pepper, and garlic over the chicken.

    To make the buffalo dip, heat the cream cheese in a microwave for approx. 2 minutes. Stir the cream cheese about every 30 seconds to avoid burning. Stir the melted cream cheese together with the hot sauce.

    Spread the buffalo dip mixture across the chicken thighs. Make sure the dip reaches the edges of the baking dish.

    Finally, sprinkle the cheddar cheese over the top of the casserole.

    Wrap the casserole dish in foil, and bake it for 30 minutes on a medium rack. Then, remove the foil from the dish and bake for an additional 20 minutes or until the cheese turns golden brown.

    Slice into 6 slices for serving!

          I made Buffalo chicken dip by using shredded chicken breast, cauliflower rice, about a cup of ranch dressing and quadrupled the hot sauce. So good!

            Very tasty! I subbed diced boneless, skinless chicken breast. Was very watery, as others have said. I also used a whole medium sized head of cauli (needed to use it before it went bad), so that could have contributed to the problem. Thought about draining the liquid, but didn’t want to lose any of the buffalo flavor. My (non-keto) hubby LOVED it - he went back for a third helping! Want to figure out how to keep the excess liquid to a minimum, but will definitely be making this again.

              We loved this recipe. It smelled so good! My husband had 2 servings! I used butterflied chicken breasts instead of thighs, used a lb. of cauliflower and 1/2 cup diced celery. added an ounce of blu cheese to the sauce and garnished with additional celery. Next time I think I will cut up the whole head of cauliflower, as we ran out before the chicken was gone.

                  Loved loved loved this. I used frozen cauliflower rice (straight from the freezer into an 8x8 casserole dish), topped it with raw chicken tenders (cut into bite sized pieces - enough so that none of the cauliflower was visible), and then did the sauce as per the recipe. Not watery. Super super delicious and definitely a new part of the rotation!

                  Definitely a recipe I will be making again. I used rice cauliflower and cut the chicken thighs into small pieces. Between the two steps cutting this yummy casserole easy peasy. Thank you for sharing this recipe.

                            Very tasty!! One small thing I did differently to make life a littler easier was once I flatten the chicken I cut it into bite size pieces so it is easier to cut the casserole into portions once cooked. Going to definitely make this again!

                              My entire family enjoyed this, even the non-keto eaters. I used a 12 ounce package of chopped cauliflower from the produce department as a time-saver and opted to cut the chicken into bite-sized pieces. Like other reviewers, it did come out of the oven quite watery but letting it rest about 10 minutes before eating remedied that completely. I made it last night for dinner and it has already been requested I make this again.

                                I love the taste of this recipe but every time I make it, it’s literally submerged in liquid when it comes out of the oven. And the cheese slides all over the place and comes off the chicken. It’s gross and I follow the recipe exactly
