I love the flavor contrasts in this dish. The sauce is very creamy, but the sun-dried tomatoes give a tart bite! The basil gives such a fresh note and the mushrooms are so meaty in flavor! Not to mention the smoked paprika ties the dish all together with a nice smoky note. This will easily become a go-to dish...it is made in one pan!

Ingredients

  • Chicken Breast

  • Parmesan Cheese

  • Avocado Oil

    1-⅓ tablespoon

  • Step 1

    Prep all ingredients by slicing mushrooms, grating cheese etc. as well as measuring out spices and liquids.

    Slice the chicken breasts in half horizontally. Mix the smoked paprika, onion powder and salt and pepper (add these to taste). Sprinkle this mixture on both sides of the chicken.

    In a heavy bottomed pan, heat pan until very hot, then add half of the avocado oil. Add the chicken and sear on each side. This should be about 4-5 minutes on the first side and 2-3 minutes on the second side. Cook the chicken completely through. Remove chicken to a clean plate.

    Add the other half of the avocado oil to the hot pan. Add the garlic and sliced sun-dried tomatoes.

    Add the mushrooms and cook for 3-5 minutes until nicely browned. Deglaze the pan with balsamic vinegar, scraping the pan to remove the browned bits.

    Add the half and half and parmesan cheese and simmer for 1 minute. Add the cooked chicken back in and cook for 2-3 minutes to reduce it to a sauce consistency.

    Top with fresh, julienned basil and serve hot!

    We liked this recipe a lot. Next time we will put the sun-dried tomatoes and spices in the food processor with some evoo and then marinate the chicken. We will also probably double the half and half and parm for additional sauce. We ate with noodles and served it to our kids with pasta.

      Followed this recipe exactly tonight (except used heavy cream) and LOVED it. I used the full 8 oz. package of baby Bella mushrooms. This will go in the regular rotation for sure. Next time, I’ll serve with mashed cauliflower so none of that yummy sauce goes to waste.

          I haven’t but I’ve used full fat coconut milk in a similar recipe, and it worked great because it’s rich. I bet it would work well here.

        This dish was perfectly delicious. I modified due to what I had on hand and used zucchini instead of Sundried tomatoes, also used heavy whipping cream. I had chicken in the freezer but it was in strips so I pounded it more flat and seasoned according to the recipe. My husband was impressed, i will definitely make this again, just loved the cream and cheese with the balsamic vinegar mxed together was so good.

              Loved it! Cream (used heavy cream on hand) really does a great job cutting the balsamic tart. The combo was perfect. Even my picky husband liked it. I don’t like mushrooms and used Swiss chard I had on hand instead. My husband’s suggestion was to use spaghetti squash next time as a side. Will make again! It reminded me of Carrabbas balsamic chicken dish.

                This was delicious! I skipped balsamico, since I dont like it, multiplied everything to make a full pot (2kg of chicken). I served it on protein low carb black pasta. Perfection!

                  How can I reduce the total carbs in this recipe? I guess I’m not sure where the carbs come from, tomatoes mushrooms and half/half?

                    Using heavy cream instead of half and half would reduce carbs a little. Most of the carbs come from the balsamic, mushrooms, and sun dried tomatoes, so maybe reduce or remove the mushrooms or tomatoes as well.

                        In Canada it’s called 10% cream . So supposedly half cream half milk, or 10% milk fat. We get 10% , 18% is used for coffee, and 35% which we call whipping cream.

                                      Made this for the first time today. It was delicious! I do not like mushrooms, so I cooked the recipe without and then ate the meal with a cup of fresh spinach. Soooo tasty. Definitely will become a staple go to meal for us.
