  • Step 1

    Preheat an oven to 375 F. Line a sheet tray with parchment paper or a silicone mat. Whisk the eggs, coconut oil, coconut milk, and kosher salt together. Make sure you use solid coconut oil not melted.

    Add in the baking powder, almond flour, and Swerve.

    Fold in the cheese. Mix until combined. The texture should be thick enough to scoop, drop on a sheet tray and hold its shape.

    Using a 1 oz cookie scoop, scoop out 12 heaping scoops at least 1 ½” part. This should yield 12 biscuits of about 1.25 oz each. Make sure they are round on top because they will not rise in the oven.

    Bake for 15 minutes until the tops are starting to turn brown on the edges and the biscuits are set. Allow to cool on the sheet tray until cool enough to handle.

        The recipe makes 12 biscuits, and the serving size is one biscuit, or 1/12th of the recipe.

      Solid recipe, Opted to leave out the swerve (less sweet) and brushed the tops with compound garlic butter. Not so sweet and just the perfect amount of delicious. Pairs well with ALL seafood just like Red Lobster's

        I made this, added some garlic and dry Italian Seasoning. Instead of coconut milk i added water to cream to make 1/4 cup. I hate almond flour so i swapped out 1/2 cup with pistachio flour. Pistachio flour is sweet. I was confused that recipe called for Swerve Confectioner- i used extra Swerve Granular. I put in a 1/8 cup of parmesan cheese powder. I used a whole cup of cheddar cheese instead of half and i'm glad i did. It was a little bit too sweet but was so good fresh from the oven. With butter. And keto tomato soup.

          Tried this today and it was pretty good. I did substitute EVOO instead of coconut oil so it made the mix very watery.. And I also used Silk Almond and Cashew milk instead of coconut milk and it still worked fine. I might add more cheese next time coz some of the biscuits tasted a little nutty lol Overall, still a good breakfast biscuit!

                      Yes, but: Coconut flour isn’t the same as almond flour, it’s 100 times more absorbent. You’d need to use 1/2 the amount of coconut flour and add another egg. Otherwise the biscuits would be very dry and crumbly and would fall apart.

                        I always have to add some coconut flour to these or the batter is way too wet to drop into a baking sheet and hold its shape, but I don’t mind it. Otherwise they’re very good toasted for breakfast with a hard boiled egg.

                          I really liked these. Reminds me of the red lobster rolls. I added some melted butter and salt on top of them. Very good.

                            I didn’t sweeten it, but added half a tsp of Marigold vegetable stock powder for a more intense flavour, and a pinch of cheese to the top of each before baking. Delicious!

                                      These were not great. Having the almond flavor from the flour in pretty much everything it’s used for is one thing. But adding the coconut flavor just did not work for me. It’s too much. And the biscuits are too dense.

                                          Yes but you will need to chill the biscuits well before baking or the fat will not hold in the biscuit!
