Step 1
Roughly chop the eggplant and tomatoes. Slice the garlic. Finely chop the parsley. Grease a large pan with olive oil and heat over medium heat. Add the eggplant, tomatoes, garlic, parsley, cilantro, smoked paprika, cayenne pepper, ground coriander, cumin, salt, lemon juice, and vegetable broth.Step 2
Stir all well and cook for 25-30 minutes or until most of the liquid has evaporated. Remove from the heat. Mash the vegetables and optionally add some more salt to taste.Step 3
Transfer to serving plates. Optionally, top with some sour cream and garnish with freshly chopped parsley and lemon wedges. It is a great side to your favorite Keto meals.
