Nothing beats a hearty soup that soothes the soul and heals the body. This chicken and broccoli Keto soup is packed with detoxifying ingredients and unique flavors. This soup is one of the BEST out there because it is quick and easy to prepare, chock-full of nutritional components, and explodes with flavor. If you are thinking about starting a Keto detox to shed that post-holiday weight, we recommend starting with this low-carb soup.

What are the potential health benefits of this Keto meal?

This soup is full of nutrient-rich sulfurous veggies that may help improve your overall health. Sulfur may assist in numerous bodily functions, including building and repairing DNA and protecting cells from damage. Recent studies also suggest that consuming sulfur-rich compounds from food may have anti-inflammatory effects and protect you against chronic conditions. Sulfur compounds are found in many vegetables, leafy greens, animal products, nuts, and seeds. This Keto detox soup is loaded with sulfurous vegetables to boost your health.

What goes into this Keto detox soup recipe?

The main ingredients in this soup are boneless, skinless chicken thighs and broccoli. The chicken is an excellent source of protein, while the broccoli is high in fiber and essential nutrients. These ingredients are brought to life by adding aromatics like onions, leeks, and garlic, which happen to be among the best sulfur food sources. These ingredients are stewed in chicken stock and seasoned with salt, crushed red pepper, turmeric, and lemon juice. Not only is this soup cleansing, but it is also comforting, satisfying, and absolutely delicious.

How can you customize this low-carb soup?

This detox soup recipe is super versatile and can be customized to your liking. For the protein source, you can swap the chicken thighs for chicken breast, turkey breast, or turkey thighs. As for the broccoli, you can replace it with another sulfurous vegetable like cabbage, brussel sprouts, or kale. To flavor the soup, you can add seasonings and herbs to your preference.

  • Step 1

Place the broccoli head on a cutting board, cut it into small bite-sized pieces, and set it aside. Finely dice the onion, celery, leek, and cauliflower. Mince the garlic, and set these vegetables aside.
    Step 1
  • Step 2

Season the chicken with ¼ tsp salt and pepper on both sides. Add 1 tbsp of oil to a large pot over medium-high heat. Add the chicken thighs.
    Step 2
  • Step 3

Cook the chicken for 4 minutes on each side until golden. Remove from the pot and set aside on a plate. Let the chicken rest for 10 minutes, then shred it using a fork.
    Step 3
  • Step 4

Reduce the heat to medium, and add the remaining olive oil to the pot. Add the onions, celery, and leeks. Sauté for 3-4 minutes until the onions are translucent. Add the minced garlic and sauté for 1 more minute until fragrant.
    Step 4
  • Step 5

Add the chopped cauliflower, turmeric, chili pepper, chicken stock, and remaining salt. Bring the soup to a boil and add the shredded chicken. Turn the heat down to a simmer, and let the soup cook for 15 minutes.
    Step 5
  • Step 6

Add the chopped broccoli florets and let the soup simmer for 5-8 minutes more. Add the lemon zest and juice and stir. Taste and adjust seasoning if needed.
    Step 6
  • Step 7

Scoop the soup into 4 bowls, and top with sesame seeds. Serve immediately.

Omitted the citrus and sesame seeds due to histamine avoidance, and added fresh ginger and fresh herbs. I also browned / sautéed everything before adding the stock, and warmed the spices in olive oil before adding. Turned out absolutely delicious. Will definitely add to my rotation.

Clarification please. The last photo and comment states 4 bowls but the quantity at the start of the recipe says 6 bowls, which is correct? Thank you.

Great soup but we would reduce the hot pepper flakes just a bit. We always make our own bone broth after enjoying a rotisserie chicken.

Pretty decent soup. I love a soup that really fills you up and makes your nose run and this soup fulfilled those expectations. The combination of leeks, lemon juice, zest, and turmeric is a phenomenal flavor and that flavor alone is why I’ll be making this soup again. I used breasts instead of thighs (browned each side, removed to a plate, continued the recipe but added the still not fully cooked chicken breasts back into the pot at the simmering stage, removing when done, shredding and adding back in when the soup is finished). Watch your portion sizes - the instructions says to scoop the soup into 4 bowls, but my apps default serving size was 6!
