Step 1
Place the broccoli head on a cutting board, cut it into small bite-sized pieces, and set it aside. Finely dice the onion, celery, leek, and cauliflower. Mince the garlic, and set these vegetables aside.Step 2
Season the chicken with ¼ tsp salt and pepper on both sides. Add 1 tbsp of oil to a large pot over medium-high heat. Add the chicken thighs.Step 3
Cook the chicken for 4 minutes on each side until golden. Remove from the pot and set aside on a plate. Let the chicken rest for 10 minutes, then shred it using a fork.Step 4
Reduce the heat to medium, and add the remaining olive oil to the pot. Add the onions, celery, and leeks. Sauté for 3-4 minutes until the onions are translucent. Add the minced garlic and sauté for 1 more minute until fragrant.Step 5
Add the chopped cauliflower, turmeric, chili pepper, chicken stock, and remaining salt. Bring the soup to a boil and add the shredded chicken. Turn the heat down to a simmer, and let the soup cook for 15 minutes.Step 6
Add the chopped broccoli florets and let the soup simmer for 5-8 minutes more. Add the lemon zest and juice and stir. Taste and adjust seasoning if needed.Step 7
Scoop the soup into 4 bowls, and top with sesame seeds. Serve immediately.

Omitted the citrus and sesame seeds due to histamine avoidance, and added fresh ginger and fresh herbs. I also browned / sautéed everything before adding the stock, and warmed the spices in olive oil before adding. Turned out absolutely delicious. Will definitely add to my rotation.

Clarification please. The last photo and comment states 4 bowls but the quantity at the start of the recipe says 6 bowls, which is correct? Thank you.

Great soup but we would reduce the hot pepper flakes just a bit. We always make our own bone broth after enjoying a rotisserie chicken.

Pretty decent soup. I love a soup that really fills you up and makes your nose run and this soup fulfilled those expectations. The combination of leeks, lemon juice, zest, and turmeric is a phenomenal flavor and that flavor alone is why I’ll be making this soup again. I used breasts instead of thighs (browned each side, removed to a plate, continued the recipe but added the still not fully cooked chicken breasts back into the pot at the simmering stage, removing when done, shredding and adding back in when the soup is finished). Watch your portion sizes - the instructions says to scoop the soup into 4 bowls, but my apps default serving size was 6!
