What Is Jamoncillo De Leche?
Sometimes also just called “jamoncillo”, this is a traditional Mexican candy. It’s very similar to fudge and it’s flavored with milk and sugar. If you’re making any Keto Day of the Dead recipes to celebrate seasonal holidays, this is a really easy and fun one that can be shared with others. A few small changes have been made to the traditional recipe so it is Keto-friendly, but it’s very similar to what you may have had in the past.
What Are Keto Baking Chips?
Since the Keto diet has gained popularity globally, many specialty food brands now make packaged ingredients for it. Check the baking aisle at your local grocery store for a section with low-sugar substitutes. If you can’t find a brand of Keto baking chips, you can also substitute them with 100% dark baking chocolate. Many Keto ingredients sold in stores can also be purchased online in advance of making your recipe.

Brown Sugar Replacement

Mexican Vanilla Extract

Liquid stevia

Step 1
Combine the heavy cream, butter, brown sugar substitute, Mexican vanilla, and liquid stevia in a small pot on the stove. If you don’t own Mexican vanilla extract, you can use regular baking vanilla extract. Include a pinch of cinnamon at your discretion if you are using regular vanilla. Also at your discretion, you may include a pinch of salt, but the cream and Keto baking chips will already provide some salt to the fudge.Step 2
Heat the ingredients on the stove until the cream is bubbling and the sugar dissolves. Although there isn’t a lot of liquid in the pot, don’t let it reach past simmering. Take the hot cream off the stove and allow it to cool for a minute. Then, whisk the Keto baking chips into the pot until they melt and you have a thick and creamy mixture.Step 3
Choose what you are going to mold the fudge in. You may use silicone molds with shapes relating to something you’re celebrating. You can line a mini-cupcake tin with paper liners to fill with fudge. You can also line a small container with parchment paper to mold the fudge into a whole piece to cut later. Fill your desired mold with the liquid fudge, then let it chill in your refrigerator overnight or for at least 12 hours. Enjoy a piece of fudge straight from the refrigerator whenever you want a treat.
