Eco-Keto Gluten Free and Vegan Nutty Baklava Breakfast Granola

Not another Keto granola, I hear you say...! Well, here’s a Keto breakfast idea to rock your Eco Keto diet world. An indulgent and nourishing combination of nuts and seeds inspired by the sweet flavours of Greece. Almonds and walnuts form the base in traditional Greek baklava, so here also form the base to this granola. Ground flaxseeds and almond butter bind it all together, while the cinnamon and ground cloves give it the all-important baklava flavour. Now you don't have to miss out on the taste of baklava on a Keto diet!

This Keto breakfast granola is easy to make with just 11 simple ingredients, which may sound like a lot, but all are store cupboard staples. The sweetness comes from the cinnamon and the sugar-free syrup, or sweetener of choice, which can be adjusted to your liking.

What can I serve the granola with?

This granola is awesome sprinkled over your morning shake, smoothie bowl, yoghurt, or just to snack on their own; whatever your style, it’s a great addition to your Eco Keto diet plan.

How long does this keep?

This granola will typically keep for a month or so if stored correctly in an airtight jar and away from heat and direct sunlight. (If it lasts that long!)

Can I substitute ingredients?

If you don't have sugar free syrup to hand, you can use any sweetener of choice or omit it completely.

You can make variations of the recipe by swapping out the almond butter for hazelnut butter or peanut butter.

If you cannot tolerate coconut oil in your diet, this can be swapped out for 2 tablespoons of avocado oil or olive oil.

Recipe Steps

  • Step 1

    Preheat the oven to 180C / 356F. Line a rimmed baking tray with baking paper. In a large bowl, add chopped nuts, seeds, almond butter, spices, sweetener, coconut oil and salt.

    Use a large wooden spoon or spatula to combine all the ingredients together. Ensure all the nuts and seeds are evenly coated.

    Tip the granola mixture onto the baking tray. Use the spatula to spread out on a single layer. This will allow it to bake evenly and crisp up.

    Bake for 12-16 minutes in the middle of the oven or until golden brown. Be sure to give the granola a mix halfway through baking time. Spread evenly again.

    When ready, leave the granola in the baking tray to cool completely. Transfer to an airtight container.

    Yum. I converted the ingredients into rough cup measures - here’s the conversion Almonds and walnuts, 1 cup each Pumpkin and sunflower seed 1/4-1/3 cup each Ground flax 1/8 cup Peanut or almond butter 2/3 cup Coconut oil 1 cup I added sesame and chia seeds plus some sweetener

      Very tasty and filling! I like mine a bit sweeter so I added a couple of tablespoons of splenda at the end to coat it and it is perfect for me.

        I made this recipe this morning and it’s delicious!!!!!!! After eating some I decided to throw in a few sugar free chocolate chips. Excellent recipe. I have a $10 kitchen scale (that everyone on keto should have). Great recipe, thank you

          It would be so helpful to have measurements in both grams AND cups/ tablespoons/ teaspoons as some (quite a few?) of us don't have kitchen scales.

          Measurements are too hard to understand. × servings? What does that mean? Looks tasty but this recipe makes no sense.

            Recipe makes ten servings, macros are for one serving. Make the recipe, divide into ten piles and put each in a snack bag. Boom, 10 servings.

            Each ingredient “serving”has a weight below it. I go by the weights when an ingredient just says serving. Looks great!
