Working out on the Keto diet
Working out on the Keto diet does not have to look like anything labor-intensive. In fact, most of the time the opposite may be recommended to you. I don’t like blue cheese
Don’t like blue cheese? No problem! Try substituting the blue cheese with crumbled feta or goat cheese. Diced whole-milk mozzarella cheese can also be substituted here. These types of cheese will react to the heat the same way as blue cheese does and give the same texture in your final recipe.

Looking for more ideas for what to add to your egg muffins? Try adding chopped spinach or other diced vegetables like peppers or onions. You can substitute the bacon with other cooked meats. Think of diced ham, crumbled pork sausage, or finely shredded chicken. Add a second shredded cheese to the egg muffins to make them extra cheesy at your discretion.

Step 1
Preheat the oven to 360 F (180 C) and lightly oil a muffin tray. Slice the bacon into strips and add them to a large dry frying pan. Over medium heat, fry the bacon for 3-4 minutes until cooked through.Step 2
Add the spinach to the pan with the bacon, and stir it in until the spinach wilts. Remove the pan from the heat and add the blue cheese. Stir together to combine and leave the pan aside to cool.Step 3
Add the eggs to a new, large mixing bowl and season them with salt and pepper to taste. Whisk the ingredients to combine them. Add the cooled bacon and cheese mixture into the whisked eggs, and stir them through.Step 4
Pour the mixture evenly between the oiled muffin cups, filling them to the top. Bake the egg muffins for 18 minutes until cooked through and golden brown. Allow them to cool in their tins before removing and eating.

This is my first Keto recipe that I've made. I did substitute the blue cheese with feta, but it turned out amazing. Will definitely make this again.

Not a fan of blue cheese but I gave it a try anyway! The cheese is too strong tasting for me. Husband loved it.

I see no one responded to your question so I'm just gonna say that if the serving size for 2 is 3.5 ounces it's probably mini muffins. But it's a great question.

This is a great base recipe. I’ve made these several times and often swap out ingredients for whatever I have in the fridge. Smoked salmon, sausage, sautéed peppers, etc. just do not overfill those cups! And I put a sheet pan under the muffin tin just in case to catch any overflow.

Not a blue or feta cheese fan. Can I use shredded mozzarella without it changing the net carb count to much?

This may be a silly question. I started Keto 2 days ago. Do you drain the bacon fat from the pan before adding the spinach? I didn’t see that step so I went ahead and added the spinach and the cheese. But it’s very “watery”. Did I miss a step?

You can also use bacon grease to grease the muffin pan.

Is it watery or greasy? I would drain as it could result in the muffins being very greasy. Just depends on your bacon how much fat is rendered during cooking. If it is actually watery then it’s a different source.for example, frozen spinach can release a lot of water when cooked

You can add heavy whipping cream but you will have to change the macros (fat content)
