Our low carb recipe is prepared with juicy bell peppers, tender red onion, garlic, chopped tomatoes, aromatic fresh basil, and eggs. The recipe is cooked entirely in one skillet for minimal fuss and washing up!
Are Tomatoes Keto?
Tomatoes are a member of the nightshade family, along with other vegetables such as eggplant, bell peppers, potatoes, and pepper-based spices. Although tomatoes sit at the higher end of the low carb vegetable scale, they can still be enjoyed in moderation as part of a balanced Keto diet. We have used one cup of chopped tomatoes for this low carb recipe, but you can reduce the quantity a little if you wish to lower the carb count further. You can add a splash of water or stock if extra liquid is needed.

Recipe Steps

Step 1
Finely dice the onion. Thinly slice the garlic and bell peppers. Heat the olive oil in a skillet over a medium heat. Add the prepared vegetables. Pan fry gently for 3-4 minutes until tender and fragrant.Step 2
Add the chopped tomatoes to the skillet along with the fresh basil. Stir well to combine. Bring to a boil, then simmer for 5 minutes.Step 3
Make two wells in amongst the tomato mixture. Crack an egg into each well. Cover the skillet loosely and cook for 4-5 minutes or until the eggs are cooked through to preference. Serve hot with your preferred Keto sides.
