This simple summer salad is loaded with low carb veggies and fruits and topped with creamy feta cheese and crunchy walnuts.
This makes a great lunch option or even a side salad to BBQ meats.

Ingredients
Radish
2 medium - 3/4" to 1" diameter
Spinach
2 cup
Balsamic Vinegar
1 tablespoon
Olive Oil
1 tablespoon
Avocado
1 each
Basil, Fresh
1 tablespoon
Feta Cheese
¼ cup
Walnuts
¼ cup
Red Onion
¼ small
Strawberries
¼ cup
Salt, Sea Salt
⅛ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Add the walnuts to a dry skillet over a low/medium heat. Toast gently for a minute or two until lightly browned.Step 2
Add the spinach to a large serving bowl. Thinly slice the radishes, strawberries, onion and avocado. Add to the bowl with the spinach.Step 3
Crumble the feta cheese over the salad and season all with a little salt and pepper. Toss to combine.Step 4
Scatter the toasted walnuts over the salad.Step 5
Whisk together the oil and vinegar and drizzle over the salad. Scatter with fresh basil to serve.
