Keto Mediterranean Vegetable Salad with Italian Dressing
The Mediterranean Keto diet can be effortless to make with some simple ingredients you probably already have in your fridge, or that can easily be purchased from your local store. This fantastic Keto vegetable salad makes for a wonderful recipe you can serve as a delicious Mediterranean side or a light dinner with your favorite Keto-friendly bread. It takes about 15 minutes to prepare everything, and the salad tastes great the next day too (so make sure to store those leftovers). The salad is served with some extra cheese on top, but that's completely optional.
Can I use some other cheese?
Of course! Another great option is crumbled feta, cottage cheese, or ricotta.

Spinach

Cucumber

Onion
1 medium - 2 1/2" diameter
Extra virgin olive oil
0.25 cup
Lemon juice

Dijon mustard
0.5 tsp
Erythritol Granulated
1 tsp
Fresh Parsley (for flavoring only)

Thyme, dried
0.5 tsp
Salt

Garlic powder

Step 1
Finely chop the tomato and pepper. Peel and finely chop the onion. Roughly chop the cucumber.Step 2
Rinse and drain the spinach and arugula. Add to a large bowl. Toss to combine.Step 3
Add the prepared vegetables. Toss well again. Set it aside.Step 4
In a small bowl, combine the olive oil, lemon juice, mustard, erythritol, parsley, thyme, salt, and garlic powder. Mix well to combine. Optionally, prepare some more dressing and store it for later.Step 5
The mixture should be completely combined. Taste and adjust the seasoning to taste. Optionally, add a pinch of dried chives.Step 6
Crumble the goat's cheese. Add to a bowl with vegetables and pour in the prepared dressing. Toss well to combine.Step 7
Transfer the salad to serving plates. Optionally, add some more cheese on top and garnish with sliced lemon. Serve immediately.
