Cookie dough is one of the best pleasures in life and it’s just as delicious in a low carb version! I used coconut flour in this to ensure a low carb count and a delicious flavor. Blend everything together in a mixer first before adding the sugar free chocolate chips which just need to be stirred in at the end. I added pink himalayan salt to the dough which is a must! I topped it with a little extra too, but that’s completely optional!

Recipe Steps

  • Step 1

    Combine cream cheese, softened salted butter, coconut flour, Pyure, liquid stevia drops, vanilla extract and pink salt. Cream together until combined.

    Then add the sugar free chocolate chips and stir until combined.

    Scoop cookie dough into 16 balls and place into mini cupcake liners. Sprinkle with additional pink himalayan salt!

    My daughter gave it a thumbs up so I'm giving it 5 stars. The only thing is that when I did it I didn't get 16 servings I got 22 even though I didn't really stray from the recipe. I used 1/4 cup of xylitol instead of a stevia and I used those 2 ounce cookie scooper spoons.

      Not very good. But I understand that people have preferences on sugar substitutes. I’m not a fan of the pyure aftertaste. Prefer swerve...may try recipe with swerve instead. My advice is that you try half or a quarter of the recipe so you don’t waste ingredients. I ate three of these pieces and chunked the rest.

          I thought it needed more vanilla and added about 1 tsp total and I changed the sweetener to 1/3 cup swerve brown sugar. Sooooo good!!!

            I was so looking forward to this because I love cookie dough. I used to mix up cookie dough and ate most of it raw. A few made it into the oven. I made these tonight and it was not what I expected at all. Tried one bite and tossed it out. I was really hoping this would work to satisfy my sweet tooth but alas, it didn’t.

                They should keep for up to a week in the fridge or up to a month in the freezer!

              I just made these and they didn’t taste like I thought they would. I didn’t have the granulated stevia so I used swerve. Probably should have used xylitol. The recipe made 32 minis instead of 16 minis. I didn’t double or change anything except the use of swerve instead of the granulated stevia. I did sprinkle less than a small pinch of Himalayan pink sea salt on each and then took 1/8 tsp of xylitol and sprinkled each one with it on top of the sea salt. Didn’t use all of it either
