Love this more than a traditional crumbed schnitz! I use this for chicken recipes too.

A pound of pork stand 6 servings? That’s only 2 Oz a piece??

Your right. 90 grams a serve wouldn’t touch the sides. Double that maybe and carbs climb to 4 which is still good for a crunchy bit of meat!

What pork rinds are you talking about?

Yes these are thin-sliced pork chops. You get additional protein through the pork rinds.

How long do you bake them? Do you need to flip them midway through?

              • recipewriter

                recipewriter 5 years ago

Yes! 375F is usually a good baking temp for this. Make sure you let all your excess egg batter run off before laying on a sheet tray for baking.

Do you think pork rind panko would work instead of the flour?

As long as you grind it up finely, then yes!
