Keto Cheese Crackers

I love how easy these are to make! They do take some time to crisp in the oven, so plan ahead! The only ingredient in these crackers is cheese! To make these, I used a regular sliced cheese. You can also use ultra thin sliced cheese, but the bake time will be significantly less.

Be sure to use sliced cheese not block cheese! Sliced cheese holds it's shape as block cheese does not!

  • Step 1

    Preheat an oven to 250 F. Cut each slice of cheese into 4 squares by cutting the slices in half vertically then horizontally. Place on a parchment lined sheet.

    Bake in the oven for 1 hour. Remove from the oven and let crackers cool slightly to where they are firm enough to flip over.

    Place them back in the oven for another 45-50 minutes. Then place them on a cooling rack to cool completely. They should crisp up after they have cooled down.

    How do you store these after cooling? How long do they keep well?

      Store in an airtight container. They'll last as long as they last. :) Probably about 2 weeks.

    The only thing I would add is use thick slices. Regular or thin sliced cheese is harder to judge the cooking time.

      For us Brits out there use Lidl's Milbona Emmental slices. Cut in half, put on greaseproof paper in 700k microwave for 2 mins. Lovely firm crunchy square cracker that can hold any filling. Very moreish!

      Used Sargento pepper Jack slices and they turned out delicious! Very happy to have discovered a healthy delicious snack

        Really good. I played it by eye instead of time and they ended up a little chewy but still tasty. Next time I will follow exactly and see if they are more textured like a crackerâ˜ș

          I made these in my air fryer on the bake settings I used the packaged Land O Lakes presliced cheese and came out perfect

          I have these in the oven. It’s one big blob of cheese. They all melted together. Very disappointed. I spaced them like the picture shows. Will try one more batch spaced far apart.

          How thick are y’all cutting your slices? Anyone know how many grams or ounces the initial piece of cheese should weigh before cutting it in 4 pieces?

            The initial piece of cheese is 1 oz. Most sliced cheese is 1 oz a slice (28 grams).

          I used the Costco brand “Adams Reserve” and microwaved them on parchment paper, 3 at a time. They turned out EXACTLY like cheddar Wisps, except they didn’t leave that weird coating inside my teeth. Put 3 - 5 spaced out on a piece of parchment paper and microwave for 1 minute, undisturbed, then let rest for a minute. The less slices of cheese you put on the paper, the crispier they’ll get.

            Cooking in the microwave for 1 minute is the way to go, and if you don’t have parchment paper you can use paper plates and the crackers turn out crispy

          I get my deli Cheese sliced at #1 and used the microwave for 1 minute and check. I've tried every cheese, all good.
