Low-Carb Italian Roasted Mushrooms and Veggies

You can dress it with your favorite low-carb dressings or serve as it is – whatever you prefer. Adjust the amount of Italian seasoning, or add your own herb mixture and enjoy!
How do you customize this recipe?
This recipe can easily be customized by adding some other types of veggies, such as broccoli, onions, asparagus, Brussels sprouts, chopped zucchini, or some chili peppers. We added Italian seasoning to the recipe, but you can swap it for your favorite herbs and spices.

Absolutely! Any type of your favorite mushrooms would work perfectly for this recipe.

Ingredients
- Brown mushrooms - 350 g 
- Cauliflower - 250 g 
- Cherry tomato - 250 g 
- Garlic - 6 clove 
- green bell pepper - 125 g 
- Italian seasoning - 1 tbsp 
- Parsley - 2 tbsp, chopped 
- Extra virgin olive oil - 2 tbsp

- Step 1 Roughly chop the pepper. Cut the cauliflower into smaller florets. Add to a large bowl.
- Step 2 Wash and pat dry the mushrooms and tomatoes. Peel the garlic. Finely chop the parsley. Add the mushrooms, tomatoes, garlic, and parsley to a bowl with cauliflower. Season with the Italian seasoning and drizzle with olive oil. Toss to combine.
- Step 3 Preheat the oven to 200° (400°F). Line a baking tray with parchment paper. Arrange the prepared mushrooms and veggies over the prepared baking tray. Bake for 20-25 minutes.
- Step 4 Transfer to serving plates. Garnish with fresh chopped parsley. Optionally, add more salt or black pepper to taste. Serve immediately.
