Step 1
In a small bowl, whisk together the eggs, cream, and all seasonings. Set this beside your stove for later.Step 2
In a medium sized skillet over medium heat, cook the chorizo. Use a spatula to break the meat up as it cooks, letting it turn slightly crispy - about 4 or 5 minutes.Step 3
Turn the heat down low and slowly pour the egg mixture over the chorizo. Place a lid over the omelette and cook until the egg cooks through and the bottom is lightly brown. Adjust the heat as necessary to promote even cooking and avoid burning.Step 4
During the last 30 seconds of cooking, sprinkle the cheese over the omelette. You can use the lid again to help melt the cheese quickly.Step 5
Serve with chopped cilantro! You can also expand on this meal by laying sliced avocado in the center and folding the omelette in half, at our discretion.
