Recipe Steps

  • Step 1

    Melt the butter and unsweetened chocolate in the microwave on HIGH in 30-second increments, stirring each time until the chocolate and butter are melted.

    Add 4 T Swerve icing sugar, baking powder, 1 t coconut flakes, coconut flour, dark cocoa powder, and an egg. Mix well to combine. Microwave on HIGH for 45-50 seconds until cooked through, being careful not to overcook the cake as it will become too dry.

    In the meantime, combine toast the 2 teaspoons of coconut flakes in a dry pan over medium heat until browned. Also, combine 1 t Swerve icing sugar with ½ t water to make a glaze. Top hot cake with toasted coconut flakes and glaze!

      I thought It was great plenty of Cho. Flavor and texture from the coconut. I think I’ll try cutting back on the sweetener next time and see how it is.

        I have a different brand of sweetener and I T was much better than the 4 T it called for. Topped it with a squirter of whipped cream and it hit the spot fir those sweet chocolate cravings!

          🌟🌟🌟🌟🌟This mug cake is delicious and satisfied my sugar craving (new to keto). It filling as well. The coconut flakes add texture and taste. It’s a perfect keto comfort food. ✨Only 5 net carbs and absolutely delicious! I made this three days into my keto journey at the end of the day. I loved it so much that I read the reviews and noticed the controversy on if it was keto friendly or not. Reading the response review and then learning how to apply it (total carbs - fiber - sugar alcohol = net carbs) made all the difference. Thanks!

                Substitute the 4T to 1T; they are all too sweet. all the premium recipes.

              These macros can't be right. 52g total carbs and 5g net? Total carbs are usually 2-2 1/2 times net carbs. If CM calculated the total carbs, this is not even keto and should be avoided. Waaaay too many carbs to even be called low carb.

                It is 5 net carbs. If you look closely, there's a heck of a lot of sugar alcohol you have to subtract as well. Remember, total carbs - fiber - sugar alcohol = net carbs

              52 carbs? That’s almost total 3 day carb intake for me. How is this low carb? Compared to a regular cake yes but not diet friendly

                Wonderfully delicious! I undercooked it slightly and enjoyed the opposite of a hot lava cake. I had a cupcake surrounded by warm frosting! OMG so satisfying ❤️
