Finding Keto/Low-Carb vegetarian recipes that are both nutritious and delicious can be quite hard. However, this spinach and goat cheese omelet is one recipe you will want to keep. What to serve with this spinach and goat cheese omelet?
While this spinach and goat cheese omelet is a satisfying meal on its own, it can be paired with complementary sides to create a balanced and satisfying breakfast or brunch. Consider serving it alongside a refreshing mixed green salad tossed in a light vinaigrette dressing for a burst of freshness. Alternatively, you can accompany it with sliced avocado or a side of sautéed mushrooms for added flavor and texture.
How to customize this recipe?
Customizing this spinach and goat cheese omelet is a breeze, allowing you to tailor it to your taste preferences and dietary needs. For an extra flavor boost, consider adding diced tomatoes, chopped bell peppers, or caramelized onions to the filling mixture. You can also experiment with different types of cheese such as feta, mozzarella, or cheddar for a unique twist. Additionally, feel free to incorporate your favorite herbs and spices to enhance the overall flavor profile according to your liking.
How to store leftovers?
If you happen to have leftovers, storing them properly will help maintain their freshness. Simply transfer any remaining omelet to an airtight container and refrigerate for up to 2 days. To reheat, gently warm the omelet in a skillet over low heat until heated through. Avoid microwaving as it may cause the eggs to become rubbery. Serve with a sprinkle of fresh herbs for a delightful burst of flavor.

Step 1
In a small bowl, beat together eggs, oregano, garlic powder, and salt. Melt ½ tablespoon butter in a small 9” nonstick skillet over medium heat. Add spinach. Toss for 1-2 minutes or until the spinach is wilted. Then transfer to a small plate.Step 2
Return the skillet to the burner, and add the remaining butter. Swirl the melted butter so it covers the bottom of the skillet. Pour the eggs into the skillet. Cover with a lid ( I used one from a pot). Cook for 1-2 minutes or until the eggs have almost set.Step 3
Sprinkle spinach and goat cheese onto one side, cover, and cook for another minute or until the eggs are no longer runny; fold the omelet in half and slide it onto a plate.
