Keto Jumbo Cheese Stuffed Meatballs

Ground Chuck 80% Lean 20% Fat by Kroger

Ground Sirloin by Publix
8 ounce
Salt
¼ teaspoon
Black Pepper
½ teaspoon
Onion Powder
¼ teaspoon
Mustard Powder
1 teaspoon
Paprika
½ teaspoon
Italian Seasoning
2 teaspoon
Raw Egg
1 large
Almond Flour
1 tablespoon
Mozzarella Cheese
6 tablespoon, shredded
Olive Oil

Step 1
Preheat an oven to 400 degrees and spray an oven-safe baking dish with pan spray. In a bowl, use your hands or a spoon to combine the chuck, sirloin, salt, pepper, onion powder, mustard powder, paprika, italian seasoning, egg, and the almond flour.Step 2
Divide the mixture into four equal parts. Shape each piece into a ball, and press down the centers to form a crevice for the cheese.Step 3
Spoon 1 ½ TB of the shredded mozzarella into each meatball.Step 4
Form the meat back over the cheese, and reshape the meatballs. Place them in your baking dish. Drizzle a teaspoon of olive oil over the top of each meatball.Step 5
Bake the meatballs, uncovered, for 40 minutes or until the meatballs are completely cooked through and the tops have browned and crusted slightly.Step 6

NOT appropriate for someone with Bariatric surgery. Try cutting a mozzarella stick in 1/5 portions, using recipe ingredients to surround each piece of mozzarella and bake, should make a lot more meatballs, be easier than stuffing meat with shredded, and be more suited to smaller portions. Even low carb, over-eating (today's larger portions) will set back weight-loss dramatically.

You should know just from looking what you need to do to make this suitable for you. Maybe you need to not look at keto friendly recipes since we tend to eat larger portions of allowed foods. Namaste❣️

You were given nutritional values,makes it simple to figure out. How much/many you eat is on you. Adjust it to your dietary macros.

Finally, something my teenagers loved. I'll be adding this to the list of easy quick dinners. I had mine with Rao marinara and cauliflower rice. 😋

Absolutely delicious! I did not have Italian seasoning so I used basil, rosemary, and garlic blend seasoning. I covered it with Trader Joe's turkey bolognese sauce and served over homemade zucchini noodles.

Great recipe! I sub'd some stuff though. Instead of two pounds of ground beef, I did 1 lb of ground beef and 1 lb of ground Boulder Italian sausage. I omitted the paprika and mustard powder, and added garlic powder. I also made 15 smaller meatballs instead of 4 jumbos. I cut up 3 string cheese sticks and stuffed the meatballs that way. After baking, I covered 3 meatballs in 1/3 cup of Monte Bene tomato marinara. 5 net carbs. Yum!

These are a good start. They needed more seasoning. I changed the Italian seasoning to old bay. This helped some.
