Keto No Cook Zucchini Spaghetti al Limone
Zucchini Spaghetti al Limone is a great vegetable noodle dish with bright flavors from lemon juice and lemon zest. The flavors are amped with crushed red pepper flakes, garlic, and freshly grated parmesan cheese. This is a simple dish with bold flavors that would go well with many holiday and Low Carb Christmas recipes. This recipe will require a vegetable spiralizer.
What does spaghetti al Limone mean?
Spaghetti al Limone means spaghetti with lemon.
Can I use yellow squash?
Yes! Feel free to substitute the zucchini for yellow squash instead. The macros are very similar so that you can replace them 1:1 without issues.
Do I need to add the red pepper flakes?
No, you do not need to add the red pepper flakes! However, the recipe was made fairly mild in spiciness, so feel free to double the red pepper flake amount if you would like to!
Serving suggestion
Serve this dish with a wonderful Christmas Crackling Pork https://www.carbmanager.com/recipe/keto-christmas-crackling-pork. The noodles will be a delicious bed for the crispy pork!

Step 1
Spiralize the zucchini noodles on the spiralizer by cutting off the ends of the zucchini and then placing into the noodle maker. Make the noodles and then place them on a paper towel lined baking sheet. Sprinkle the noodles with the kosher salt and allow the noodles to sit for 5-10 minutes. This will allow the noodles to release some water and draw in the salt.Step 2
Place the noodles into a medium sized bowl and toss with the olive oil, grated garlic, red pepper flakes, lemon zest and the juice of ½ a lemon.Step 3
Grate in the parmesan cheese and toss it again. Serve immediately!

Wow! Amazing side dish. Will definitely make this again. Used garlic powder instead of fresh garlic. Bet it’s even better with fresh.
