Keto Healthy Mexican Guacamole

7 ratings

This Keto healthy Mexican guacamole is prepared with a zesty avocado base and a helping of healthy low carb veggies. Loaded with fats and flavor, this is a great option to spice up weeknight meals when you are short on time. This makes a quick and easy Keto side dish, perfect for summer dining.

Keto Healthy Guacamole Ingredients

We have used crushed avocado and lemon juice to form the base of our Keto Mexican guacamole. This is then combined with diced tomatoes, peppers, onion, cumin, fresh cilantro, garlic, olive oil and jarred jalapeño peppers. The guacamole is then lightly mashed together for a chunky consistency.

Serving Suggestions

Our Keto healthy guacamole is a great addition to any Keto Mexican inspired meal. Perfect served with low carb fajitas or spicy cauliflower rice. Alternatively this makes an excellent dip for Keto tortilla chips.

Looks good I will try. I was wondering how long it lasts in the fridge and does it freeze well?

It will last a little longer if you do not discard the stones. Store as airtight as possible WITH the stone. The stone helps keep the avocado from turning brown. Yes it freezes well!
