Ingredients

  • Cauliflower, Raw

  • Baking Powder

  • Coarse Kosher Salt by Morton

  • Avocado Oil

  • Sour Cream

  • Step 1

    Wash and then divide the cauliflower into smaller pieces that will fit into a food processor using a sharp knife. You can include the cauliflower stems as well. Process the cauliflower into small pieces.

    Add the chopped cauliflower into a large mixing bowl. Add the eggs and the rest of the ingredients except the avocado oil. Mix to combine well.

    Heat a medium nonstick skillet over high heat until hot. Turn the heat down to medium and add 1 tbsp of avocado oil. Add 4 fritters to the pan evenly spaced using a 1 oz cookie scoop. Allow them to cook on the first side for 1-2 minutes. Turn the heat down if they are browning too quickly.

    Flip the fritters and give them a press to flatten them and continue to cook them for another 1-2 minutes until cooked through. Repeat with the remaining batter. Top the fritters with cold sour cream and fresh chives.

    Can almond flour be substitute for coconut flour for this recipe?

      Sadly almond flour and coconut flour you can't really swap 1 to 1 as coconut flour is both more water asbrobent and dense you can try but you might have to adjust the recipe a lot to compensate for that i.e. add another egg or something and will affect the macros just to make it work I hope this helps and good luck :)

      Really good. I added some cayenne pepper for taste. I also cooked them just a little bit longer for added crispness

        I use 1 (10oz) package of mashed cauliflower and 6oz of riced cauliflower. I think they are fantastic!

          Wow, these are SO delicious! This recipe is a keeper. I will make these again and top with a burger for sure. I can’t speak to how it would work with frozen cauliflower, but I don’t see why it wouldn’t work.

                Yes I tweaked the recipe with a few others I have found. 1 1/2 cup Cauliflower rice 2tbsp Almond flour 1 tbsp Coconut Flour 1 Egg 1/4 cup shredded mozarella Salt and Pepper to taste. Makes about 10 fritters Really Good! I'll probably play with it some more for next batch.
