  • Step 1

    Preheat the oven to 400 degrees Fahrenheit.
  • Step 2

    Add the ground almonds, Parmesan, garlic powder, salt and pepper to a mixing bowl. Finely chop the rosemary and add to the bowl. Mix together well to combine.

    Coat the chicken thighs liberally in mayonnaise on both sides.

    Roll the thighs in the breading mixture so that they are well coated all over.

    Transfer to a shallow oven tray and bake for 20-25 minutes until the chicken is cooked through and the coating is golden brown.

    I don't know about you, but when I buy boneless, skinless chicken thighs they're never round and pretty like this picture. Instead they're long and flat. So, I cooked them for 15 minutes @ 400 on one side, flipped them over, sprayed a little avocado oil and broiled them until the other side was crispy. Perfection!!

      This was fantastic! I used Renee's Mighty Caesar dressing instead of mayo with garlic, rosemary, salt and pepper. Cooked in the air fryer at 400 for 15 mins, turned over and cooked another 15 mins. Turned again and cooked 5 more mins to crisp up the top. So good!

        Great recipe as far as flavour. Mine were soggy not crispy so I ended up broiling. And cooked at least 35 minutes. Next time I’m going to try air fryer - sounds like success with others. Definitely make again flavourful.

                        Our family enjoyed this recipe as written, however we did bake for an extra 5 minutes. Even our daughter who’s not a chicken lover loved this preparation! She said it was clucking good!

                          This was delicious. I did not have ground almonds, so I used pork rinds. The flavors meshed well together. It is a keeper.

                            Don't talk on the phone while you're fixing this. I forgot the mayo even though it was right in front of me! LOL. Made this several times and it's always delicious. I'm sure we'll like it even missing a key ingredient. Browning in the air fryer at 400 for about 25 minutes. Watching every 5 to make sure it doesn't over brown, Very tasty but I'll be sure to add the mayo next time! : )

                              25 minutes at 400 F temp not enough for the tights to be cooked. Came out still raw. Any ideas for how much longer to cook?

                                It’s enough for the air fryer but in the oven you may have to do it longer. It flip it half way.

                                with bone atleast 35-45 mins and check for clear juices depending on size of thigh, 20-25 mins would be for boneless/skinless thighs

                                  This looked amazing so I thought I’d give it a try but not sure if my chicken was not the right type… it came out soggy and tons of juice! Can anyone help tell me what I did wrong because I NEED to eat this 😂

                                    Yea mine as well. I ended up broiling to get the top crispy. Then they were good. But interesting on the soggy. I thought maybe my dish was too deep.

                                    I had the same issue :) if you have a cookie cooling rack, put it on a cookie sheet or flat baking pan..make sure you spray nonstick to keep from sticking. Works for me :)

                                    After you clean your chicken thighs dry them completely and also try chicken that was not frozen before cooking because it holds a lot of water

                                  I totally hacked this recipe by using Renee's mighty Caesar dressing instead of mayo, garlic and lemon, then rolling in crumbled pork rinds. So much flavor but similar nutritional profile. Comes out so crispy
