Keto Corned Beef Hash
Traditional corned beef hash is high in carbs. Since it’s made with a filler of chopped potatoes, Keto dieters can’t eat this. However, corned beef alone is an excellent Keto food. Corned beef is made with brisket, so it’s high in fat and sodium - exactly what you need! To make this hash Keto, plain corned beef is mixed with spices and thawed cauliflower rice from frozen. The small cubes of cauliflower rice mimic chopped potato in both look and texture. This is a breakfast staple you can keep in your memory bank. Make this Keto corned beef hash as a quick breakfast, as part of a larger meal, or as part of your meal prep. It can be stored for up to 5 days in the refrigerator and easily reheats in the microwave!
Making The Perfect Texture
There are just a couple of simple tips to follow when making your own Keto corned beef hash. For one, make sure the corned beef is completely cold before you open the can. If it’s warm, the fat content of the beef will make it difficult to work with. While blending the corned beef, you want it mixed to a pastey texture. If you leave it too chunky, the hash won’t be mixed thoroughly and won’t cook properly later. When cooking, break up the hash often in the pan like you would when cooking ground beef. This will help keep the ‘hash’ in your hashed beef!
Butter Substitutes
While this dish obviously won’t fit any vegetarian or vegan diets, you can substitute the butter with non-dairy cooking oils. There are some cooking oils that are Keto and some that are not. Also, not all cooking oils can be used for the same type of cooking. Since the corned beef hash does need to cook for about 10 minutes, avoid using olive oil. Choose an oil with a higher smoke point, like avocado or coconut oil. If you don’t like the taste of coconut oil lingering on your food, avocado oil doesn’t leave an after taste.

Step 1
Before you make your hash, chill your can(s) of corned beef in the refrigerator so you start with cold ingredients. If you have the traditional style of can, open the corned beef by pulling down on the supplied key. Then, twist the key around the circumference of the can to remove the sealing ribbon. Pull the ends of the can off to reveal the chilled corned beef. Cut the beef into small chunks and put them all in either a food processor or powerful blender.Step 2
Pulse the corned beef until the fat breaks down and the beef is pulverized into a pastey mixture. Transfer the beef to a large mixing bowl. Use a large spoon to mix the corned beef with THAWED cauliflower rice, onion powder, and salt. Once mixed, fluff the mixture up with your spoon. Meanwhile, melt the butter in a large non-stick pan over medium-high heat.Step 3
When the butter is hot, scoop the corned beef in the pan. Spread out the mixture and leave the heat on high as it cooks the meat. Leave the pan undisturbed until the meat has browned on one side and releases from the pan. Use your large spoon or a spatula to break up the meat and flip it over to reveal the browned side. Repeat this process to brown the meat on the opposite side.Step 4
Once the meat has heated all the way through and browned about 50%, break it up with your cooking utensil into bite-sized crumbly pieces. If you don’t like crispy pieces, you can simply just heat the meat through without browning it. Serve the corned beef hash hot. You can serve this dish by weight along with other Keto breakfast foods, like eggs, slices of avocado, or Keto Hashbrowns.
