Ingredients
- Raw Egg - 3 medium 
- Avocado - 1 each 
- Lime Juice, Fresh - 1 tablespoon 
- Cilantro - 1 tablespoon 
- Scallions - 1 large 
- Olive Oil - 1 tablespoon 
- Salt, Sea Salt - ¼ teaspoon 
- Black Pepper - ⅛ teaspoon

- Step 1 Peel the avocado and add the flesh to a mixing bowl. Slice the scallion and roughly chop the cilantro and add to the bowl along with the lime juice. Roughly mash together with a fork to combine.
- Step 2 Add the eggs to a mixing bowl with the salt and pepper and beat together.
- Step 3 Heat the oil in a saucepan over a medium heat and add the beaten egg. Leave to settle and start cooking for a moment then scramble with a wooden spoon.
- Step 4 Once the eggs are just cooked to preference, add the guacamole and stir through to serve.
