Keto Egg Fast Steamed Egg Custards
These Egg Fast Steamed Egg Custards are perfect for hitting that sweet tooth on this diet! Creamy, fresh eggs are mixed with water and a little sweetener and vanilla extract. The mixture is placed into ramekins and steamed for the ultimate creamy texture. This recipe is simple and easy to make! It also stores well so feel free to make a double batch.
What kind of egg should I use for this recipe?
Please try to source pasture-raised eggs since they are higher in Omega-3 fatty acids and Vitamin E. You want to eat the best ingredients possible since eggs will be the main source of nutrients during the course of your Egg Fast.
What kind of sweetener should I use?
Feel free to use powdered erythritol or powdered monk fruit.
How do I reheat leftover custards?
Simply place them in the microwave and heat in 30-second increments until hot.
What if I don’t have a steamer?
If you don’t have a steamer, place the ramekins in a large pot filled with only an inch or so of water. Cover the pot with a lid and allow the steam to cook the egg custards this way.

I think the commenters who are modifying the ingredients are missing the point. This is for an EGG FAST. I appreciate having a new option.

This is not a good recipe. This is just semi sweet scrambled eggs! Have to add heavy cream (which is still Keto) and more vanilla. Water not necessary unless specifically using a low output steam device. Beware…do not make this.

I’m going to try it with almond milk instead of water.

Where are the carbs coming from?
Keto-rific-Suzi 3 years ago
The carbs come from the sweetner - NOT the eggs. Eggs have no carbs.

The sugar alcohols count as total carbs but can be subtracted as net carbs.

I think it comes from the eggs.

Could this be made with heavy cream in place of some of the water? For example, 6 oz water & 2 oz heavy cream?
MommaBear007 3 years ago
I would use 4 oz of heavy cream and no water. It gets watery during the steaming process. I also would have to make smaller portions depending on the carb ratio with the heavy cream added. Without it, the recipe sounds more like steamed sweet eggs. That doesn't sound good at all.

Steamed this for 18minites and it was still very watery in the making 😭
