This delicious, yet simple egg salad will be your new go-to lunch. Creamy eggs are coated in a nice creamy mayo and accented with sweet, fresh peas. Serve this on a keto-friendly bread like the Keto Loaf Bread or Keto Artisan “Sourdough” bread.

  • Step 1

    Bring a medium-sized saucepan filled with water to a boil. Once the water is boiling, add the eggs carefully into the water. Boil for 8 minutes.

    Drain the hot water and add ice to the top of the pot. Add in cold water to cover the eggs and allow them to sit and chill until cold.

    Remove the eggs from the shells.

    Smash the eggs with a fork.

    Then add the mayo, salt, and peas.
    Step 5
  • Step 6

    Smash everything to ensure it is all homogenous. Serve on top of lettuce or keto-friendly bread.

    I haven't made this, but looks like a nice twist on egg salad with the peas. The nutritional info is for one serving, and the recipe makes 4 servings. The 1/4 cup of peas is divided in the 4 servings, and also provides fiber. I have made a keto crustless chicken pot pie that called for peas AND carrots in the recipe. Again, a small amount divided among each serving. So moderation is key, and we can relax 😉

        For all of the negative Nelly’s… peas are on the limit of keto friendly and seriously how many people have you seen get fat from eating peas.

          I finely chop celery and add a little celery seed and omit peas. Lower carb and just as satisfying.

            Peas aren't keto! Leave them out and reduce the carbs by 5.25g.

              If there’s 2.5 total carbs per serving, how do you drop it by 5.25 unless you’re eating the full amount.

                      I grew up with peas in potato salad as well as egg salad. I guess it's a southern thing. I like a little more flavor so I added a little onion powder an garlic powder. Overall I liked it and may try it again. It was easy to make.

                        This recipe is good. I like how the 8 minute eggs leave them a little creamy allowing for the less amount than normal of mayonnaise. I understand the peas in egg salad sounds strange, but I believe it gives the salad a sweetness without adding sugar. I like to add a little bit of yellow mustard and sometimes a 1/2 tsp of vinegar (whatever is on hand) for some tartness.

                                        Without the Peas, the total recipe is 3 carbs, per my calculations. Therefore, each serving would be .75 carb.
