    Mix chia seeds, almond milk, and stevia together in a bowl. Microwave the bowl in 45-second intervals until mixture is HOT, stirring in between each time. Make sure to stir very well before you chill the pudding later so all the seeds can rehydrate.

    Spoon the almond pudding in individual cups for serving and top with berries and cacao nibs as desired! Cover the cups or jars with plastic wrap and let them sit in the fridge overnight. The next morning, your pudding will be thick and ready for eating.

    I used 1 cup of almond milk and 1/4 cup[2oz] of chia/flax seed mix. Heated on medium in microwave 45 seconds [2 rounds] stirred in between and after. Covered with cling wrap. Checked on it just now in fridge and it's definitely thick. I split into 2 servings, put a couple blueberries and Lily brand chocolate chips on it. Going to try in morning. It's probably about 4 servings but I cut the milk amount in half but glad I did maybe wouldn't be as thick

            I did 4 - 45 second zaps in microwave. Think I’ll try a couple more next time as it’s still got a little chew to it. I’ll definitely play around with the flavours as I couldn’t find nibs and I find it a bit bland. But it’s a nice change from eggs in the morning.

              Heating and stirring on low-med heat on the stovetop instead of the microwave allows you to keep a better eye on how the chia are hydrating and how the pudding is thickening. I made my own version with a shot of pumpkin spice coffee enhancer and sugar free vanilla syrup instead of the berries and cacao and it was so good I ate it hot!

                It was a complete fail for me. I likely missed something. Open to suggestions. 2 oz of chia seeds seemed too little for 2 cups of liquid. I weighed 2 oz chia seeds and it looked like 1 table spoon. I used 1 cup almond milk and 1 cup heavy cream. Didn’t thicken for me after 30+ hours. Added more chia seeds and still it stayed too liquid for days. Finally poured it down the drain.

                  Try 1/4 cup of chia. That's 2 oz. I just made it was perfect. I also reduced almond milk to 1 cup instead of 2. It's thick

                  If you take it out- stir it a few times to mix up the seeds and then put it back, it should thicken! I had this issue my first day and was so confused, it was because my chia seeds settled and didn’t have enough room to rehydrate.

                  I have a similar recipe but I don't microwave. I leave the chia seeds in the almond milk for an hour or two and it gels. I add the toppings and refrigerate for 24 hours. My topping is usually yogurt and a top layer of jam ends up looking like a parfait jar

                I liked it ok. It thickened really nice. The flavor was ok. It was just too bland for me. I think I’ll add some vanilla extract and make it more like a French vanilla pudding flavor.

                  Just delicious! I change a few things.. Instead of 2 cups of vanilla almond I add 1 cup of unsweetened almond milk and one cup of heavy cream (1 spoon of vanilla). Instead of berries and cacao nibs I add unsweetened coconut and 1oz crush walnuts. Highly recommended 😀

                  I used heavy cream and water(1:1) instead of almond milk and have tried different variations- cinnamon and sf vanilla sweetener is one of my favorite- reminds me of my g'mas rice pudding, I think I'm going to try PB powder next.

                  Came out perfectly.I boiled it in a sauce pan on the stove top on low heat and also maybe added a bit more chia seeds. It thickened as I kept stirring.
