    Mix chia seeds, almond milk, and stevia together in a bowl. Microwave the bowl in 45-second intervals until mixture is HOT, stirring in between each time. Make sure to stir very well before you chill the pudding later so all the seeds can rehydrate.

    Spoon the almond pudding in individual cups for serving and top with berries and cacao nibs as desired! Cover the cups or jars with plastic wrap and let them sit in the fridge overnight. The next morning, your pudding will be thick and ready for eating.

    Followed the instructions, used the same ingredients listed, microwaved and stirred in intervals until hot, refrigerated overnight. I was shocked when I picked one up this morning and it nearly spilled out of the cup. They have barely set at all, very runny. The usual chia pudding I make gets very firm and is nice, but this keto version is nothing like it. Not sure why it didn't work

        Found that NOT using sweetener the pudding gets nice and thick without heating. I sweeten it as I dish up a portion to eat. Add a bit of unsweetened whipped cream!

          Love it! I typically don’t do breakfast so it’s a nice brunch for me. I add a tablespoon of almond butter for more fat and a tablespoon of pecan halves and it’s delicious. However I didn’t add any cacao nibs. If I’m still feeling hungry before work I do half an avocado with a 1.5 tbsp of tuna and 1 tbsp mayo whipped all together and holds me over until dinner (:

            Sounds like a lovely recipe. I usually make mine with 2 Tablespoons of chia seeds, 1/2 cup unsweetened almond milk and a little real maple syrup. I add nut butter and/or roasted pumpkin seeds. You can’t go wrong with all that crunch.

              I really didn’t like this recipe very much. The serving is so small I don’t see how it could be called a full meal. Even adding a hard boiled egg still left me hungry and unsatisfied. I won’t be making this again.

                You can have it as a snack in between breakfast and lunch or in between lunch and dinner. Add a tablespoon of peanut butter to it also for healthy fats to help with you stay satiated. ❤️

              I didn't think I'd need to microwave it, but it's definitely a crucial step. The seeds don't rehydrate enough if just placed in the fridge overnight.

                      I have made a different one with similar ingredients and never had to microwave it. It was fine when put in the frig overnight.

                    One star only because using microwave oven is suggested. Getting rid of microwave ovens is one of the first basic steps towards healthy eating habits. Besides: chia seeds soak perfectly fine in cold water/any vegetable milk alternative, no need to heat it up.

                      That is a horrible reason to give a recipe one star. A lot of us do keto to lose weight and don't care about using a microwave.

                    I used 1 cup of almond milk and 1/4 cup[2oz] of chia/flax seed mix. Heated on medium in microwave 45 seconds [2 rounds] stirred in between and after. Covered with cling wrap. Checked on it just now in fridge and it's definitely thick. I split into 2 servings, put a couple blueberries and Lily brand chocolate chips on it. Going to try in morning. It's probably about 4 servings but I cut the milk amount in half but glad I did maybe wouldn't be as thick

                          I did 4 - 45 second zaps in microwave. Think I’ll try a couple more next time as it’s still got a little chew to it. I’ll definitely play around with the flavours as I couldn’t find nibs and I find it a bit bland. But it’s a nice change from eggs in the morning.

                            Heating and stirring on low-med heat on the stovetop instead of the microwave allows you to keep a better eye on how the chia are hydrating and how the pudding is thickening. I made my own version with a shot of pumpkin spice coffee enhancer and sugar free vanilla syrup instead of the berries and cacao and it was so good I ate it hot!
