Keto Coconut Green Tea Rice
This Keto rice is infused with flavor and Keto-friendly fats. Our low carb side is prepared with cauliflower rice, green tea, creamy coconut milk, a hint of lime zest, and topped with fresh cilantro and scallions to serve. This makes a great alternative rice dish when you are looking for something a bit different and makes a great accompaniment to Keto Chinese or Thai inspired mains.
What Tea Should I Use?
We have used green tea bags to infuse the cooking liquid for our Keto rice. You may prepare the cooking stock with any kind of green tea you prefer, in the form of tea bags or leaves. If preparing with leaves, be sure to strain and discard the leaves from the liquid. For additional flavor, you could also use lemon green tea bags if preferred and omit the lime zest. Please be sure to adjust your macros to account for any changes made to the original recipe.

Our low carb rice makes a delicious side to accompany Chinese or Thai inspired Keto mains. The rice perfectly complements a creamy low carb Thai green curry with chicken, shrimp, or a plant-based protein. This also makes a great alternative rice to accompany a simple stir fry recipe. Ingredients
Cauliflower rice
4 cup
Scallions
2 medium - 4 1/8" long
Cilantro
2 tbsp
Lime Zest
1 tsp
Green Tea Bag
1 Tea Bag
Water
0.75 cup
Canned coconut milk
0.33 cup
Salt, sea salt
0.5 tsp
Black pepper
0.13 tsp
Recipe Steps

Step 1
Add the water to a saucepan and bring to a boil. Remove from the heat. Add the green tea bag and leave to infuse for 5 minutes. Squeeze the tea bag in the pan, then remove and discard.Step 2
Add the coconut milk to the saucepan. Return to the heat and bring to a gentle boil. Reduce to a simmer and stir well to combine.Step 3
Add the cauliflower rice, salt, pepper, and lime zest to the pan. Stir well. Continue to simmer until all the liquid has evaporated and the rice is tender. Taste and adjust seasonings as desired.Step 4
Divide the rice between individual serving bowls. Roughly chop the scallions and fresh cilantro. Top the rice with the scallions and cilantro to serve.
