Ingredients
Whole Small Shallot
8 x 1 whole
Bacon
4 slice - 6" long
Baby Spinach
2 cup
Olive Oil
1 tablespoon
Cheddar Cheese
½ cup, grated
Gruyere Cheese
½ cup
Heavy Cream
⅓ cup
Parmesan Cheese
¼ cup, grated
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Preheat the oven to 400 degrees Fahrenheit.Step 2
Peel the shallots and trim away the tips, taking care to keep them whole. Add to a pan of boiling water and simmer for 10-12 minutes until fork tender.Step 3
Heat the olive oil in a skillet over a medium heat and add the bacon. Cook through until golden.Step 4
Once the shallots are cool enough to handle, slice each one in half and arrange in a small oven proof dish. Scatter over the spinach leaves.Step 5
Pour the cream over the vegetables and season with salt and pepper.Step 6
Scatter the cheddar and gruyere over the vegetables.Step 7
Crumble over the cooked bacon.Step 8
Scatter with the grated Parmesan.Step 9
Transfer to the oven to bake for 12-15 minutes until cooked through and the cheese has melted.

Delicious. Added grilled chicken for more protein. Already made twice and it will be a staple in my weekly menu.
