Keto Chicken, Sundried Tomato, Mozzarella and Basil Salad
This flavorsome Keto salad is rich in healthy fats and low carb veggies. Our simple Keto salad recipe is prepared with peppery arugula, aromatic fresh basil, tender red onion, creamy mozzarella cheese, sweet sundried tomatoes, and cooked shredded chicken. The salad is then drizzled with a little lemon juice and olive oil to serve. Perfect for a low carb lunch or a light Keto dinner option.
Can I Use a Different Cheese?
We have used tender mozzarella cheese to add fats and flavor to our Keto salad recipe. If preferred, you may substitute the mozzarella for an alternative cheese. Crumbled feta or goats cheese would make tasty substitutions in this recipe. Please be sure to adjust your macros to account for any changes made to the original recipe.
What Kind of Chicken Should I Use?
We have used precooked chicken for our low carb salad recipe. You can use any leftover home-cooked chicken, precooked shop-bought chicken (without added sugars), or rotisserie chicken. You can use any cut of chicken you prefer, however dark meat cuts such as thigh or leg will provide more fats and flavor.

Step 1
Thinly slice the onion, roughly tear the basil and dice the avocado. Add the arugula and basil to a large salad/serving bowl. Add the onion and avocado. Toss to combine.Step 2
Roughly tear the cooked chicken and mozzarella and chop the sundried tomatoes. Add the chicken, mozzarella, and sundried tomatoes to the serving bowl. Season and toss everything together well to combine.Step 3
Drizzle over the olive oil and lemon juice. Mix well to coat the salad in the dressing. Serve immediately.
