This frittata is great for breakfast or a protein and veggie rich snack. Arugula is delicious wilted and with only 1g carbohydrate per cup, it's a wonderful addition to any meal. The frittata cooks quickly when you top the pan with a lid, so it’s great for an on-the-go meal. The frittata is topped with white cheddar, but you can use your favorite cheese!

Ingredients

  • Butter

    ½ cup, chopped

  • Cauliflower Rice

    Cauliflower Rice

    1 cup, cut pieces

  • Arugula

    Arugula

    3 cup, cut pieces

  • Raw Egg

    Raw Egg

  • Cheddar Cheese

    Cheddar Cheese

    3 ounce

  • Salt

    Salt

    ¼ teaspoon

  • Black Pepper

    Black Pepper

    ¼ teaspoon

  • Parsley

    Parsley

    2 tablespoon, chopped

  • Step 1

    Whisk together the eggs, salt and pepper.

    Heat the butter in a pan over medium heat. Once melted, chop the bell pepper and add to the pan. Cook for 2-3 minutes, or until the pepper just begins to soften.

    Add the cauliflower rice and saute for another 2-3 minutes.

    Chop the arugula and add it to the pan until the arugula is slightly wilted.

    Pour in the whisked eggs. Cook for about 1 minute, then cover the pan with a lid and reduce the heat to low.

    When the frittata is nearly cooked through, cube up the cheddar and sprinkle it all over the top of the frittata. Put the frittata under the broiler for about minute until the egg is completely set and the cheese is melted. Top with chopped parsley. Once slightly cooled, slice into sections.

          I just started my keto journey, and made this for dinner to go with pork chops. It was amazing!! I used the whole 5oz pkg of arugula, a bag of frozen cauli rice, and used extra sharp cheddar, keeping everything else the same. It think bacon added to it would be awesome! I might try that next time. It’s definitely going into my regular rotation. Thanks so much for this great recipe!

              Really good and filling! I used shredded cheese instead just cuz I like a more even melt and cheese distribution!

                    I made this little differently. I had had something similar in a restaurant and it was delicious. I sauteed the cauliflower and peppers, after which I added the eggs. I chopped up some cucumber finely and mixed it with the arugula. I tossed the arugula and cucumber olive oil with a small amount of white balsamic vinegar. When the frittata was done, I talked it with the arugula cucumber mixture. It's amazing. I love this recipe and the fact that I can switch it up with vegetables.
