Keto Italian Beef With Cabbage Noodles

1956 ratings

This meal is a gut-filling crowd pleaser! The thinly sliced cabbage acts like “noodles” in this hearty Italian meat sauce. It requires only a little prep work, and is finished within about 30 minutes so there’s no need to slave over the stove for hours! The recipe yields 8 servings which may sound like a lot, but this dish is great to meal prep to keep in the fridge and freezer for future meals!

Recipe Steps

30 min

  • Step 1

Heat olive oil in a large pan or pot over medium heat. Once hot, add the ground beef, breaking it up with a spatula or spoon.
    Step 1
  • Step 2

Add the garlic, salt, italian seasoning and basil to the meat. Once it is about halfway to being fully cooked, add in the jar of Rao’s sauce. Bring to a boil and reduce the heat to medium-low.
    Step 2
  • Step 3

Thinly slice the cabbage, add it to the beef, and toss with a pair of tongs. Once the cabbage is somewhat coated in the tomato and beef mixture, reduce the heat to medium-low and mostly cover the pan with a lid, just leaving a small crack for heat to escape and reduce. Allow the mixture to simmer for about 7-10 minutes, or until the cabbage softens.
    Step 3
  • Step 4

Allow the mixture to simmer for about 7-10 minutes, or until the cabbage softens. Remove the lid from the pan and allow to cook for a few more minutes to evaporate any liquid that was released from the cabbage. Top with chopped basil and serve!

Tasty! Just made this as my first carb manager recipe and very happy with how it came out. Followed a prior comment to add some parmesan (did it while plating for measurement). Easy to make and filling!

For a quick and easy version, I use bagged Cole slaw, ground turkey and Ragu Simply 8 pasta sauce.

Made this today, its basically unstuffed cabbage. I only used (probably too much) Italian seasoning, and used minced garlic (measure with your heart babe) it was super fast to cook, especially since I had frozen cabbage that I defrosted. My bf requested this be part of the regular rotation.

Has anybody put this in the freezer and reheated it? It doesn’t seem like cabbage would freeze well.

I make this all the time without the tomato sauce. I just call it. Hamburg cabbage casserole, and I freeze it and heat when I need it. It is fine no problem with the cabbage.

I free cabbage quarters often it actually freezes well. And if you have a vacuum sealer its even better.

This was really tasty. The only thing is, it would be nice to know how much 1 serving is. I made the 6 serving recipe with the intention to divide it into 6 servings to freeze and eat later. But I was unsure how much 1 serving is. I had to just kind of eyeball 6 separate bowls and hope they were divided evenly. .

I prefer slightly crunchy cabbage noodles as well. Especially since I like leftovers and that way the noodles aren’t soggy.
