Ingredients

  • Creme Fraiche

    ½ large - 8 1/4" long

  • Lemon Juice

  • Salt

  • Black Pepper

  • Step 1

    Slice the cucumber into thin discs – roughly ¼ cm wide. Add the cucumber discs to a mixing bowl along with the salt and stir well to combine. Set aside for 15 minutes allowing the cucumber to release any excess liquid.

    Whilst the cucumber is resting, finely slice the scallions and roughly chop the dill. Add the crème fraiche, mayonnaise, lemon juice, lemon zest, scallions, dill and black pepper to a mixing bowl. Stir well to combine.

    Drain any excess water from the sliced cucumber and blot with kitchen paper to absorb any further moisture and the salt.
  • Step 4

    Spoon the creamy dressing over the cucumber discs and stir well to coat. Refrigerate until ready to serve.

        This is similar to my mother’s recipe. She sent bed it alongside with green beans! Yum: Great side dish to take this a church potluck.

          Very good but don’t see any reason for salting the cucumbers. They were way too salty. I had to rinse the salt off before mixing. Definitely will make again but next time no salt.

            The salt also removes any green bitter taste in the cucumbers as well as releasing releasing excess water Rinse well before mixing

            The salt helps release the water in the cucumber or the salad will be very watery when combined. Just rinse after salting.

                Sometimes I use Greek yogurt instead.

                It will taste very different as the ranch has seasonings in it. The Crème Fraîche is more like sour cream. It has a tartness. You can find it in some stores and kind of easy to make.
