Keto Smoked Salmon Omelette

Eggs are great for breakfast or quick snack! I like to bulk my eggs with extra protein to help me stay full and satisfied throughout the day. I used smoked salmon for this omelette as it is one of my favorites. I used the canned version, but cured smoked salmon would be awesome!

Ingredients

  • Raw Egg

    Raw Egg

  • Smoked Salmon

    Smoked Salmon

    3 ounce

  • Butter

    Butter

    1-⅓ tablespoon

  • Parsley

    Parsley

    1 teaspoon, chopped

  • Step 1

    In a medium bowl, whisk together the eggs until fully incorporated.
    Step 1

    Heat a small saute pan until hot over medium-high heat, add 1 t butter. Add in the smoked salmon and cook until heated through. Remove to a plate. Wipe out the saute pan if some of the meat stuck to it and return it to the heat.

    Add in the rest of the butter to the hot pan, add in the eggs. As the eggs cook, scrape the cooked eggs from the outer edges to the center with a heat proof spatula. Continue doing this until the eggs are still soft on top, but almost cooked through.

    Add the smoked salmon into the middle of the eggs.

    Gently fold half of the eggs over the salmon and push the omelette to the edge of the pan. Using the spatula, gently guide the omelette to a plate. Serve hot and sprinkle with herbs, if desired!

          First time I made it did not enjoy it. The 3oz of smoked salmon was totally overwhelming. Made it again but cut salmon to 1.5oz. Did not preheat it. When eggs almost set I just put chopped salmon on and folded it over, turned heat off and let residual heat warm it a bit more. It was very good.

              American? Not real cheese, IMO. I love cheddar omelets. I bet mozarella would be good, too.

              If there is more than one recipe listed, do both. Just make sure you've only downloaded the meal plan once. I downloaded the same one two days in a row, resulting in double recipes that were not identicle per day. (They were staggered. )

              There is a theory that sliding the egg out of the pan directly onto the plate and flipping the second half of the egg over while doing this works. I'm not sure I've ever been successful. It's definitely tricky. (Cooking the egg enough so that it's firm but not overbrowning it.) I love egg scrambles. I just mix the eggs with the cooked veggies/ meat while cooking the eggs. Lovely! I bet it was good, nevertheless.

            Just put the salmon piece on the egg with a little shredded cheddar cheese and flipped top of egg over into an omelet. Worked great.👍🏽 Fast n easy

              I always have to take a bite of the smoked salmon with the egg and/ or avocado (another meal). Love baked salmon; not so keen on the smoked.

              Not sure I really needed to warm up the smoked salmon. I also used duck eggs... only two cause they are big. Very nice recipe... simple and flavorful.
