    Place the biscuits in a food processor and pulse until fine. Transfer to a bowl. Melt the butter and add it to the biscuits. Mix until fully incorporated.

    Transfer to a 20cm/8-inch springform pan, and press down firmly. Transfer the pan to the freezer while you prepare the other elements.

    Add 1 cup of heavy cream to a bowl. Use a hand mixer to beat until it's whipped. Set the bowl aside.

    To another bowl, add the cream cheese and whisk until it softens. Add it to the whipped cream and mix until incorporated.

    Place the remaining ½ cup of heavy cream in a small saucepan over low heat. Once it comes to a simmer, add the jello and whisk. Keep whisking until the powder dissolves. Take the saucepan off the heat and pour it into the cream cheese bowl with one hand while whisking with the other.

      I'm going to make this with a berry puree with unflavored gelatin instead of the Jell-o mix and see how better it fares. It looks delicious.

        Looks delish but Graham crackers and Jelo-o you can't get in the UK without paying ridiculous prices on Amazon. Any substitues for UK subscribers?

          You could use pecans; grind them up, add some erithritol to taste, melted butter and a tiny bit of vanilla. Press into your pie plate. You could use clear gelatin and mushed up berries in place of the jello!

          you can find a recipe for homemade keto graham crackers on gnom-gnom you tube channel. Also, if you can get plain gelatin or unflavored beef gelatin you can use it along with a powdered sugar free drink mix. You will need to add a sweetener though.
